Anyone that knows me knows that I am always down for a cheeky cocktail or anything alcohol related for that matter. So I thought what better to do than turn some of my favourite summer drinks into the perfect summer snack. These recipes are super easy to follow and make the best refreshments to keep you cool and a little tipsy all summer long. If you are going dry this summer or don’t like drinking, fear not as these taste great alcohol free as well.





YOU WILL NEED
Makes 8 Ice Lollies.
  • 8oz (1 cup) of gin or to taste.
  • 16oz (2 cup) pomegranate juice.
  • 12oz (1½ cup) soda water.
  • 1 fresh lime.
  • 260g (2 cup) fresh raspberries.
  • 125g (1cup) pomegranate seeds.
  • 4oz (½ cup) simple syrup.
  • Ice lolly mould.


INSTRUCTIONS

Step One:
In a blender combine the gin, pomegranate juice, soda water, juice of one lime, ¾ of the raspberries and pomegranate seeds and the simple syrup, and blend until smooth.

If you do not have simple syrup you can easily make your own at home. To do this combine half a cup of sugar with half a cup of water in a small pan, and heat on a low heat until the sugar fully dissolves. If you choose to do this make sure the syrup has cooled before adding to the mixture.


Step Two:
Muddle the remaining raspberries in a small bowel and spoon evenly into the ice lolly mould along with the remaining pomegranate seeds. 


Step Three:
Pour the contents of the blender evenly into the lolly moulds and add lolly pop sticks.


Step Four:
Freeze in the freezer overnight. Once done ensure hardened properly before removing from the moulds. Use warm water to help loosen them. Eat up and enjoy!  






YOU WILL NEED
Makes 8 Ice Lollies.
  • 8oz (1 cup) white rum.
  • 25oz (3 cup) soda water.
  • 2 fresh limes.
  • 12 fresh kiwis.
  • 4 mint leave stalks.
  • 4oz (1½ cup) simple syrup.
  • Ice lolly mould.

INSTRUCTIONS

Step One:
In  a blender combine the white rum, soda water, juice of one lime, 10 kiwis, 3 handfuls of mint and the simple syrup, and blend until smooth.

If you do not have simple syrup you can easily make your own at home. To do this combine half a cup of sugar with half a cup of water in a small pan, and heat on a low heat until the sugar fully dissolves. If you choose to do this make sure the syrup has cooled before adding to the mixture.


Step Two:

Cut the remaining kiwi and lime into thin slices and place inside the ice lolly moulds. Place one kiwi and one lime slice in each. Muddle the remaining mint leaves and spread evening across each mould to garnish. 

Step Three:
Pour the contents of the blender evenly into the lolly moulds and add lolly pop sticks.

Step Four:
Freeze in the freezer overnight. Once done ensure hardened properly before removing from the moulds. Use warm water to help loosen them. Eat up and enjoy!
