warming winter berry smoothie bowl


I’m into smoothie bowls at the moment...big time. When getting up in the morning I can never decide what to eat. I never want anything too filling but I want something that will give me a big enough nutritional boost in the morning to keep me going throughout the day. This recipe is one of my favourite berry smoothie bowls with a bit of a wintery twist. The added cinnamon is incredibly warming and perfect to keep you going during the cold winter months.

For The Smoothie:

  • 1 cup (170g) uncooked quinoa.
  • 3 cups (720ml) almond milk.
  • ½ cup 0% (100g) Greek Yogurt.
  • 3 (300g) cups frozen berries.
  • Handful of spinach.
  • 1 banana.
  • 1tsp ground cinnamon.
  • 1tbsp honey.

For the Toppings:

  • Fresh Oranges.
  • Pomegranate Seeds.
  • Almonds.
  • Quinoa.
  • Pomegranate Seeds.
  • Banana.

Step One:
First prepare the quinoa. In a pan add all of quinoa and combine with 2 cups of almond milk. Cook on a low heat until all of the milk has been absorbed and quinoa is light and fluffy. Once ready, empty into a bowl and leave in the fridge to cool.

Step Two:
Once the quinoa has cooled, in a blender or food processor combine the cooked quinoa with remaining 1 cup of almond milk and greek yogurt, frozen berries, spinach, banana, cinnamon and honey. Blend the ingredients until smooth adding more milk or water if mixture is too thick. 

Step Three:
Pour the smoothie into a bowl and top with your choice of toppings. In this post I used a combination of berries, pomegranate seeds, almonds and pumpkin seeds as they complement the cinnamon quite nicely. I also like to put this mixture in the freezer and eating it ice cold as it's like eating a rich ice cream or sorbet for breakfast.
