I always feel a bit down during this time of year as the festivity of Christmas begins to feel like a distant memory and the reality of work settles in. I’m not quite ready to accept the reality just yet, which is why I thought for today’s post I’d drink my cares away and make a variation of my favourite winter drink; a hot toddy. This drink is perfect to keep you warm on cold winter days and this blackberry and pear twist on the classic hot toddy will be one to add to the cocktail list during the remaining winter months.
INGREDIENTS:
Serves 6-8
- 20oz (2.5 cups) pear cider.
- 6oz (¾ cup) of whisky (or to taste). - 12 tbsp of honey (or to taste). - 150g of blackberries. |
- 1 lemon.
- 4 Cinnamon Sticks. - 10 whole cloves. - 3 sprigs of chopped rosemary. |
INSTRUCTIONS:
Step One:
In a large pan combine the pear cider, whiskey, honey, cinnamon, cloves and chopped rosemary.

In a bowl mash blackberries to capture juices and add juices and muddled blackberries to pan. Cut lemon into slices and squeeze lemon juice into pan and place slices into pan also.

Leave to simmer on low heat and stir ingredients until liquid boils. Remove from heat and allow spices to stew for 15 minutes.

Strain fruit and spices and serve with cinnamon sticks, rosemary and fruit to garnish.
