a berry christmas cocktail

For me, Christmas means good food and good drinks. I sometimes feel the later is often neglected as there is such a big emphasis put on Christmas dinner, but I am still partial to a good christmas themed cocktail...or two. I found this recipe one day when scrolling through Pinterest and it perfectly combines two of my favourite things; gin and christmas. It’s almost like the love child of a gin and tonic and a mojito, with a bit of a festive twist. So if you love all things refreshing, christmasy and festive then definitely give these a go.

INGREDIENTS:

- 1 bottle of gin (get a brand of your choice. I am recently loving Tanqueray No. 10).
- 1 bottle of cranberry juice.
- 1 bottle of club soda.
- Simple syrup (1 tbsp caster sugar, 1 tbsp water).
- A few fresh mint leaves.
- 1 lime.
- Ice.
- Some cranberries and limes for garnish.

INSTRUCTIONS:

Step One:
In a pan add equal parts of water and sugar and heat until sugar dissolves. I normally use 1 tbsp of water and 1 tbsp of sugar as it makes the perfect amount for one drink.

Step Two:
In a glass muddle 3 mint leaves with 1 tbsp of simple syrup.

Step Three:
Fill the cup 3/4 of the way with ice.

Step Four:
Add 2 shots of gin. Fill cup with cranberry juice until it’s just over ¾ full and then top up with club soda.

Step Five:
Add the juice of 2 lime wedges, stir, garnish, drink up and enjoy!
