simple kale salad



My love for kale has never really been that much of a secret. However for some people, trying the green vegetable takes a little more persuasion. Many think that it’s one of those fad vegetables that come and go, but if you give it a chance I promise that you will feel differently. If you don’t like it raw then try it cooked as it takes on a whole other taste and texture. See my previous post on kale for some inspiration.

Today is all about a very easy to prepare kale salad that I have been loving recently. It’s extremely summery, making it the perfect side salad for any BBQ. With less than ten ingredients, it’s simplicity at it’s finest.




INGREDIENTS
  • 1/2 a bag of kale.
  • 250g feta cheese.
  • 2 Apples.
  • 60g of sultanas and raisins.
  • 1 lemon.
  • 2 teaspoons of olive oil.
  • Salt & pepper.

INSTRUCTIONS

Step One:
Massage the kale under running water for 2-3 minutes. This brings out the flavour!

Step Two:

Place the kale in a large mixing bowl and remove all of the hard stems. Add the olive oil and a sprinkle of salt and pepper to the bowl and stir until the kale is evenly seasoned.

Step Three:

Place the kale on a baking tray and cook for 10 minutes at 200Âșc until crispy.

Step Four:

Chop and dice the feta cheese and apples, then combine in a large serving bowl with the kale and sultanas. 

Step Five: 

Squeeze the juice of a lemon over the salad before eating and enjoy!
